Hakodate prides itself on its shio ramen which is a salt-based broth. The broth of Hakodate ramen is generally quite clear which has stayed true to its Chinese roots.

Review: This seems to be the most proper restaurant out of all stalls at Hakodate Morning Market. There could be other restaurant that might sell cheaper than this restaurant, but we decided to have early lunch here because it looks the cleanest. You don't need to bargain here. If you eat in local stall and ask them to cook it for you, you need to bargain to get the best price. We chose 2.5 kg king crab which cost us ¥25000 + ¥1000 as we ask them to cook 2 ways, half steam and half grill. If you only cook 1 way, there's no additional cooking fee. It is indeed the best crab I've ever eaten. It is so fresh, sweet, and tender. The meat falls off the shell very easily. We shared this one big crab for 6 people and everyone is pretty happy with the portion. I also ordered grilled oyster with cheese ¥800 and soft-shell clams for ¥1500.

4. Yubari Melon
Location: There's a stall at Hakodate Morning Market that only sells Melon to eat on the spot. It's on one of the alley outside Hakodate square just across a small seafood stall selling uni and scallop.
Price: ¥350 per slice equal to ¥4000 yen per melon
Fun Fact: Yubari melon is the most expensive fruit in the world. Yurabi is the Kobe beef of Melon in Japan. The melons must be grown in Yubari to bear that name, and the small town produces only a limited number of these each year. Standard Yubari melon costs between ¥4000 to ¥12000. However, this melon pairs have been auctioned in Japan for as much as ¥23,500 which is around $26,000.
